Tropical Explosion Fruit Cake

Ingredients

  • WE Made Pound Cake Mix
  • 1/2 cup coconut oil
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 large banana
  • 1 cup crushed pineapple drained
  • zest from one orange
  • juice from half an orange
  • 1/5 cup pineapple juice
  • 1 cup dried mixed fruit: raisins, craisins, cherries, dates, figs
  • 1 tsp vanilla extract
  • cream cheese frosting and coconut flakes on top to taste

Instructions

  1. Mix all the non-fruit ingredients together - pound cake mix, oil, butter, eggs, vanilla extract. 
  2. Prepare fruit: 
  3. Mix prepared fruit, zest, and juice with premixed non-fruit ingredients. 
  4. Add to mini muffin tins. 
  5. Bake at 350 degrees until golden, about 10 minutes. 
  6. Remove from oven, allow to cool for 5 minutes, put on cooling rack, and allow baked good to come to room temperature. 
  7. Add frosting and coconut flakes to taste. 
  8. Enjoy!
