Ingredients
- WE Made Pound Cake Mix
- 1/2 cup coconut oil
- 1/2 cup butter or margarine
- 2 eggs
- 1 large banana
- 1 cup crushed pineapple drained
- zest from one orange
- juice from half an orange
- 1/5 cup pineapple juice
- 1 cup dried mixed fruit: raisins, craisins, cherries, dates, figs
- 1 tsp vanilla extract
- cream cheese frosting and coconut flakes on top to taste
Instructions

Mix all the non-fruit ingredients together - pound cake mix, oil, butter, eggs, vanilla extract.

Prepare fruit:

Mix prepared fruit, zest, and juice with premixed non-fruit ingredients.

Add to mini muffin tins.

Bake at 350 degrees until golden, about 10 minutes.

Remove from oven, allow to cool for 5 minutes, put on cooling rack, and allow baked good to come to room temperature.

Add frosting and coconut flakes to taste.
